Gift Card Raffle

Citrus Quinoa Salad

Here's a refreshing dish that we enjoyed at our staff christmas party. It's a great side dish, as quinoa is light in taste and full of calcium and protein.

1c quinoa
1c diced cucumber, unpeeled
1/2c dried cranberries
1/2c drained canned mandarin oranges
1/4c sunflower seeds or toasted almonds
1/2 red onion
2tbsp chopped fresh coriander or parsley

Dressing:
1tsp grated lemon or lime rind
3tbsp lemon or lime juice
1tbsp raspberry vinegarette dressing
1/4tsp coriander or cumin

Rinse quinoa under cold running water, then drain. In a saucepan, bring 2cups water to boil; stir in quinoa. Reduce heat, cover, and simmer for 15 minutes or until water is absorbed and quinoa is transparent. Drain and let cool. In a salad bowl, combine quinoa, cucumber, cranberries, orange sections, almonds, onions and coriander.
Dressing: in a small bowl, mix all dressing ingredients. Pour over salad and mix. Serve immediately. Can be refridgerated for up to 3 days.

Looking for resources on vegetarianism?

What I often hear is "I was thinking about trying to be vegetarian", or "I wanted to try being vegetarian, but didn't know what to eat". So here you go folks, check out the website http://www.peta.org/ for some inspiration on recipes, ethical issues, and healthy eating habits. They also have some really cool gear, and a free 'starter kit' that can be mailed to your home. PETA (People for Ethical Treatment of Animals)is a non-profit organization that stands up for animal rights, and provides some great resources for those of us who are curious about vegetarianism or veganism.

Registration is open!


If you’ve been thinking about trying a vegetarian diet, or if you’re looking for short-term new year’s resolution that will challenge you to take better care of yourself, this is the event for you!

On January 13th, 2011, myself and others will discuss the health benefits of a vegetarian diet. This is a FREE event, although you are welcome to make a donation, with proceeds benefiting Transition to Betterness. Join us from 7:00-8:30pm at Windsor Squash and Fitness.
